A Texas BBQ Brisket Takeover

28 July will see The Butchers Club Burger’s 17th Burger Takeover with American Chef Jay McCarthy. True to his southern roots, Chef McCarthy will be presenting a special Texas BBQ Brisket Sandwich (HK$100) for the takeover: A classic BBQ brisket sandwich, hickory-smoked for 17 hours on consistent heat with thinly sliced pickles, tobacco onions and chipotle slaw.

Chef McCarthy’s Texas BBQ Brisket Sandwich will be available at The Butchers Club Burger’s Wan Chai, Quarry Bay and Tsim Sha Tsui locations starting from Thursday 28 July. The new Butchers Club Burger Central at 82 Stanley Street will also serve this very special sandwich when it opens 12 August.

After meeting Chef McCarthy and trying his classic Texas BBQ smoked brisket, The Butchers Club Burger team can already tell this is going to be one of the biggest Takeovers yet. With this in mind, TBCB will keep the item on the menu for two months, distribute it exclusively with Deliveroo and offer it side-by-side with their popular $100 Weekday Set Lunch (guests can choose between The Burger and this limited-run Takeover to pair with their Triple-Cooked Fries).

Chef Jay McCarthy is the Corporate Chef for the Group97 Restaurant Company located in Beaver Creek, Colorado. McCarthy has consulted about cooking in major hotels and restaurants around the world, including Taiwan, Hong Kong, Mexico, Costa Rica, South Korea and China, and has appeared as a guest on Food Network’s “Ready, Set, Cook”, as well as PBS’s “Savor the Southwest”. Chef McCarthy’s unique style utilizes the native flavors of Texas.  He is an expert in preparation of underutilized cuts of beef, including chuck and round cuts, cooked over aromatic-wood coals and is also renowned for his culinary use of cactus.  Drawing from his Jamaican roots, his cooking style has been recognized for blending native Texas cuisine with tropical flavors.

Like Julia Child and Jacques Pepin, McCarthy has been designated as a Certified Culinary Professional (CCP) by the International Association of Culinary Professionals.  A rare distinction, this status is based on a rigorous examination that ascertains comprehensive knowledge of the culinary arts and sciences.
